Famous Apple Cake from Ladies Who Lunch

Apple Cake. Thank you Lara Blatter!

3 eggs
1 1/2 c. sugar
1 c. oil
1 T. vanilla
1 c. coarsely chopped nuts
(walnuts or pecans)
2 c. flour
2 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
4 apples - thinly sliced - I usually use granny smith or braeburn

Spread apples in a greased 9x13 pan.

Beat eggs at high speed until thick and fluffy. Combine sugar and oil and beat into eggs.

In separate bowl stir together flour, cinnamon, baking soda and salt. Add to egg mixture along with vanilla. Stir in nuts. Batter is thicker than a regular cake batter.

Spread batter over apples. Bake at 350 for 40 to 50 minutes. Let cool and frost with cream cheese frosting.

Peach Cobbler Recipe from Relief Society Activity on September 14th, 2010. Thanks to Mimi Mitchell for sharing it with us.


ROBERT’S CAFÉ PEACH COBBLER

Sedona, Arizona


1 20 oz. can crushed pineapple AND juice

½ c. melted butter

1 lb. Fresh or frozen peaches

1 c. chopped pecans

1 Betty Crocker’s cinnamon swirl cake mix


Mix cake mix and butter together until crumbly. Put pineapple and juice on the bottom of a 9x13 ungreased pan. Add peaches and then cake mixture. Spread evenly across fruit. Top with pecans and cinnamon topping.

Bake @ 350 for about 35 minutes.

Serve with ice cream or cool whip.

September Relief Society Activities


Playgroup is on the 9th and 23rd from 10:00- 11:30 at Claybell Park. Weather permitting of course. If it is raining, we will meet at the mall by the play equipment in front of JcPenny.

"We Can Do It" Relief Society activity will be on the 14th from 6:30-8:30. Dinner will be served. We will enjoy classes from Charlene Mueller on Budgeting and from Megan Pratt on finding Balance in our busy lives. You don't want to miss dessert. Yum!

Ladies Who Lunch will be at Mimi Mitchell's home on the 17th at 12:00. Please bring any type of salad to contribute.

Book Group will be at Donna Bagley's house on the 22nd at 7:30. The Book we are reading is "Traitor" by Sandra Grey.

Quilting Class will be at Ellen Sly's home on the 28th at 7:00. Bring your blocks, supplies and get help from our resident expert.

March 19th Genealogy Class

Renee Peterson did a fantastic job introducing us to the vast world of Genealogy on Friday. We were encouraged and inspired to start with ourselves and our immediate family. Gather all records: Birth Certificates, marriage certificates, Blessing certificates etc. and keep them all together in one place. Many helpful websites and software programs were recommended. For those who could not attend, we will post notes soon. Thank you again Renee. It is so wonderful to learn from someone so passionate about Genealogy. Those who attended were inspired to get going.

March 16th Gardening Class

Many thanks to Ann and Mike Thompson for such a wonderful Gardening class. They went above and beyond to teach us about veggies, plants, flowers trees, soil etc. Those of us who attended were most definitely inspired to start or continue with new knowledge on our own gardening journeys. "Charity Never Faileth" Relief Society Birthday Celebration Review

We had a great turnout for our "Charity Never Faileth" Relief Society Birthday Celebration. Thank you so much to all those who helped out with food, setup, planning, decorations, cleanup and attendance. Take a look at the picture of the beautiful and delicious cakes created by 12 of our sisters.
Thank you Kimberly Spencer for helping us to feel and see a little bit of what the Church does worldwide with their humanitarian efforts. There were not many dry eyes after the inspiring video. It felt good to be able to participate ourselves by preparing hygiene kits for those who are in need right now. A big thank you to our teachers Kara Wing and Mimi Mitchell for their classes on Charity to Ourselves and Charity to our Families. They were both wonderful.
